Stabilizer specially developed for ice creams and frozen desserts. Emulsifier that enables the dispersion of fatty ingredients. Stabilizes the aqueous structure of the mix and prevents crystallization.
Provides creaminess and facilitates overrun. Delays the melting of ice lollies.

Dosage: 3 to 5 g per liter.
